Luscious strawberry quinoa muffins

Recipe makes 12. .

Preheat oven to 200C.
Ingredients -
1 cup cold cooked quinoa (leftovers is great)
1 cup almond flour
1 cup wholemeal spelt flour
1 tsp baking powder
1 tsp baking soda
1/2 cup Greek yoghurt
1 egg
6 large strawberries chopped
1/3 cup raw honey .

Method
1. Place all ingredients into a large bowl, and mix well.
2. Place the patty pans into a large muffin tin. There is no need to grease these cases, as being silicone, they come off the muffin easily.
3. Using an ice-cream scoop, portion the mix evenly into the 12 patty pans.
4. Bake for 20 minutes, or until a skewer comes out clean, and they’re cooked.
5. Remove from the muffins from the muffin tin, and cool on a wire rack.
6. Once slightly cooled, remove from the patty pans. #zerowaste #sustainable #healthy #refinedsugarfree
